On the menu: Green Turtle Consommé au Xeres

The green coloring of this classic green turtle soup, made with a sherry consommé, comes from the armor-like shell of the turtle, which, when cooked, becomes a greenish gelatinous substance. Green turtle soup was wildly popular for most of the 19th and 20th centuries, until turtles became endangered and diners recognized how cute they were.

Agreed. Nothing makes a person seem quite as immature or undeveloped as the "ewwww, yuck" reaction to certain foods. And we're not talking roasted scorpions here - chicken liver, sweetbreads, and capon? C'mon, this isn't exactly Andrew Zimmern territory. 

 

Put something new on your plate. I'll bet you always order Chicken Tikka Masala or the California Roll, too.

Listen up you hamburger slobs!  Have you ever eaten tongue?  Of course not.  If you had, you would know how absolutely delicious it is.  Turtle soup, equally as delicious, especially with a dash of sherry.  So listen up you teenagers with no taste or experience, don't knock it until you try it.  If someone didn't tell you what you were eating, you would beg for more.
